Hey ya'll, happy FOOD FRIDAY! Try out this butternut squash quinoa bowl today. It is delicious, it's vegan, and gluten free!
TOTAL TIME: 1 hour
SERVING SIZE: 4
INGREDIENTS
-a large butternut squash
-1 cup of white quinoa
-1 and 1/2 cup of brussel sprouts, chopped
-3 tbsp of cashew butter
-thyme
-garlic salt powder
-parsley flakes
-1 tbsp of olive oil
-2 cups of water
STEPS -Pre-heat the oven to 400F
-Peel and chop the squash into thick cubes
-Place the cubes on a large baking pan and add some olive oil, garlic salt, parsley flakes, and thyme on top
-Bake in the oven for 25-30 minutes
-While they are baking, add the quinoa and the water to a pot and boil until the water seems to disappear
-Then saute the chopped brussel sprouts with olive oil and some seasoning
-Once everything is complete, then the add everything in a bowl and top it with cashew butter
-ENJOY!
