FOOD FRIDAY: TROPICAL WALDORF SALAD

Happy FOOD FRIDAY! Today's recipe is a spin on a popular dish, a Waldorf salad. Typically Waldorf salads have a few ingredients like pecans and apples but we have added pineapples and macadamia nuts for a summer spin, to make it a TROPICAL WALDORF SALAD! This salad is vegan, gluten free, and it is super quick and easy to make. Perfect for a summer lunch after a swim in the lake! TROPICAL WALDORF SALAD

Serves: 4 people

Time: 3-5 minutes


Ingredients:

• 3/4 cup vegan mayo

•1/2 cup of macadamia nuts

•1 cup of diced pineapple

•1 cup of diced apples

•2 tbsp of raisins

Steps:

  1. If your pineapples and apples aren't already diced, dice them into 1 inch cubes. OPTIONAL: Cut up your macadamia nuts.

  2. Pour all the ingredients into a large bowl and fold together with a spatula.

  3. Lastly, you can transfer the salad into a serving dish or just enjoy straight from the bowl!

  4. Then you are done! You can store this salad in the fridge for up to a week.
